Mushroom and Swiss Burgers

As the summer is drawing to a close I am trying to squeeze as many grilling recipes in while the weather is still warm! I came across this Hardee's Mushroom and Swiss copy cat recipe on the web and decided to try it out on my family. It was a huge hit with my husband and my two little kidlets licked their plates clean! This is very easy to make and requires only a few ingredients, most of which you probably already have on hand! Give this burger recipe a try before the cold weather sets in and you have to put the grill away for the winter!
Mushroom and Swiss Burgers
Ingredients:
1 can Campbell's Golden Mushroom Soup
1 can sliced mushrooms
1 teas. Worcestershire Sauce
Swiss Cheese, slices
1/4 lb hamburger patties, I bought mine already shaped
1/2 teas. Accent Seasoning
1/2 teas. Lawry's Seasoning Salt
1/4 teas. Ground Black Pepper

Cooking Instructions:
Step 1 : Combine the soup, mushrooms, Worcestershire sauce in a pan. Put on the stove and let simmer. Stir occasionally until heated through. Keep warm until ready to serve.
Step 2: Combine Accent seasoning, seasoned salt and pepper in a shaker or small bowl.
Step 3: Season your patties with the seasoning mixture and pan fry or grill until done.
Step 4: Place patty on a bun, top with Swiss cheese and the mushroom sauce. Enjoy!

Onion Burgers


My husband and I love eating onions...I am so glad we both like them because I know that the odor that comes from eating them isn't always the most pleasant...but since we both like them, we figure, "Hey! We cancel each other out!" This week we tried out this recipe and were blown away by the flavor of these burgers. The secret ingredient is a can of beer! I know some of my fellow LDS friends out there might go, "What?" Well, peace be with you my fellow friends but the alcohol cooks out! The beer is used to braise the onions and is also used in the meat mixture. The meat mixture consists of the beer, Dijon mustard, and garlic, and chopped red peppers. The onions are cooked in butter and the beer to give them a sweet, yet tangy flavor. Also great condiments for this burger are bacon, lettuce and tomatoes. Enjoy!

Onion Burgers

1 1/2 lbs. ground beef or turkey ( I prefer turkey)
Hamburger buns, lightly toasted
2 garlic cloves, minced
1/4 c. red pepper, finely chopped
1/4 c. beer
2 Tablespoons Dijon mustard
salt and pepper to taste
2 c. cheddar cheese

Beer Braised Onions

1 large onion, sliced
2 T. butter
1 T. sugar
3/4 c. beer

Step 1: In a large bowl combine ground beef or turkey, garlic, red pepper, ¼ cup beer, Dijon mustard, salt and pepper. Mix until well combined. Form mixture into 4 patties that are 1” thick. Grill on medium heat for 4-6 minutes per side.
Step 2: While burgers are cooking, to make beer braised onions- Melt butter in a large skillet. Add onions and cook while stirring over medium heat for 5-6 minutes or until tender. Add ¾ cup of beer and 1 tablespoon of sugar. Cook until beer is absorbed and the onions are lightly browned (about 15 minutes).
Step 3:
Just before burgers are done cooking top each burger with shredded cheese and heat until slightly melted. Remove burgers from the grill. Serve on toasted buns and top with onions. (Makes 4 Good sized Burgers)

Quesadilla Burgers


My husband and I tried these delicious burgers about a month ago and I forgot to write a post about this little cooking experiment. I had never heard of Quesadilla Burgers before but I found this burger recipe online and thought it would be fun to try something different from the traditional hamburger. Quesadilla burgers are grilled, topped with cheese, pico de gallo salsa and a delicious cilantro mayo sauce. The burger is then sandwiched between two lightly fried tortillas. These burgers are to die for and worth the work and preparation that does go into making them. If you are short on time you could buy pre made pico de gallo at the store. My favorite part is the cilantro mayonnaise that you slather on these burgers, as well as the pepper jack cheese that gives these burgers a kick! Give these burgers a try at your next BBQ! Enjoy!

Quesadilla Burgers

-Burgers-
1 lb. Ground Hamburger
1 lb. Ground Pork
1 egg
1/4 c. milk
1/4 c. ketchup
1 teas. yellow mustard
1/2 teas. garlic powder
1/2 teas. onion powder
Italian Breadcrumbs
-Pico De Gallo-
4 roma tomatoes, seeded and chopped
1/2 onion, finely chopped
2 jalepano peppers, seeded and chopped finely
2 T. green bell pepper,chopped
2 teaspoons cilantro, chopped
1 teaspoon lime juice
Salt and Pepper to taste

-Cilantro Mayo-
1 c. Mayonnaise
1T. Lime Juice
1 T. Honey
1 T. Worcestershire Sauce
1 garlic clove , minced
1/4 teaspoon cumin
2 teas. cilantro
1 jalapeno pepper, minced
Pinch of Salt and Pepper
-Additional Ingredients-
12 (6 inch) Flour tortillas
Shredded Lettuce
Pepper Jack Cheese Slices
1/2 lb. Bacon, cook and crumbled

Cooking Instructions:
Step 1: To prepare Pico de Gallo salsa- In a medium bowl combine tomatoes, onion, jalapeno peppers, green pepper, and cilantro. Add lime juice, salt and pepper. Put into the refrigerator.
Step 2: To prepare Cilantro Mayo- In a small bowl combine mayonnaise, lime juice, honey, Worcestershire sauce, garlic, cumin, cilantro, jalapeno pepper, salt and pepper. Place into the refrigerator.
Step 3: In a large bowl combine hamburger, pork, egg, milk, ketchup, mustard, onion powder, and garlic powder. Add breadcrumbs until the meat mixture no longer sticks to the bowl. Form into about 6” patties. With your finger make a depression in the middle of each burger. Grease and heat an outdoor or indoor grill and fry burgers until they are done. Within the last few minutes of cooking top with pepper jack cheese slices and grill until the cheese has melted. Remove from the grill.
Step 4: For each burger – In a small skillet, heat and lightly brown 2 flour tortillas. Assemble burgers by spreading some Cilantro mayo onto one side of the 2 flour tortillas. Lay out one flour tortillas and put lettuce and crumbled bacon on top, Add the burger on top of that, and add some Pico de Gallo on top of the burger. Place the other flour tortilla on top. Slice in half.

Ginger Chicken Burgers

With grilling season in full swing, my hubby and I made up these extremely tasty burgers to celebrate the Memorial Day weekend. You will not be let down in the flavor department when making these juicy, moist burgers. My husband and I have added this burger recipe to our "Favorites" list. This recipe is simple to make and would easily impress even the pickiest of dinner guests! I can not rave about this burger recipe enough!! These burgers are made with ground chicken, which is easy on your pocket book as well as your waistline! The burgers are flavored with just the right amount of seasoning for a little kick and are topped with a creamy ginger mayo sauce. The burgers are also topped with lettuce and cucumbers to help cool down the touch of "heat" in the burgers! Try this recipe for your next summer get together!

Ginger Chicken Burgers

1 1/4 lbs. ground chicken (Make friends with your butcher at your favorite grocery store. He will gladly grind up the chicken for you)
2/3 c. Panko bread crumbs or regular breadcrumbs
1 egg, slightly beaten
2 green onions, chopped
3 T. cilantro, chopped
1 garlic clove, minced)
1 tea. chili sauce
1 tea. salt
1/2 c. teriyaki sauce
4 teas. Honey
6 hamburger buns
lettuce
1 cucumber, peeled and thinly sliced

Ginger Mayo
1/2 c. Mayo
2 teas. sweet pickle relish
2 teas. minced fresh ginger
2 teas. lime juice
1 garlic clove, minced
1/4 teas. salt

Instructions:

Step 1:
to make ginger mayo- in a medium bowl combine mayonnaise, pickle relish, ginger, lime juice, garlic powder and salt. Mix well, cover and refrigerate until needed.
Step 2: In a large bowl combine the ground chicken, breadcrumbs, egg, green onions, cilantro, garlic, chili sauce and salt. Mix well and form into 6 patties. In a small bowl mix teriyaki sauce and honey. Step 3: Brush grill grates with oil and heat an outdoor grill (this recipe can also be done in a fry pan but grill is best!) to medium high heat. Add chicken burgers and brush with teriyaki glaze while turning and cooking until chicken has reached an eternal temp of 165 degrees.
Step 4: Place burgers on a bun, top with lettuce, cucumber and ginger mayo.
(Makes 6 good size burgers)

Chicken Teriyaki Sandwiches

As mother nature continues to tease us here in Northern Utah with warm switching to rainy & windy weather, I am doing my best to combat her efforts to destroy my grilling adventures by grilling anyway. By being defiant and making dinner on our outdoor grill despite the rainy weather we have been having the past couple of days, I have succeeded again in finding another tasty recipe. Take that Mother Nature!!! I think she heard my pleas for just a few minutes of good weather because last night, the cloud head broke and the rain stopped just long enough for the grill master (my hubby) to make up these sandwiches on the grill. Boy, where these sandwiches tasty and they don't require that much effort to make, which I am all for. I love the tanginess of the the teriyaki on the chicken combined with the sweetness of the pineapple. Delish! Give grillin' up these sandwiches a try! You won't be disappointed!

Chicken Teriyaki Sandwiches

4 boneless, skinless chicken breasts (if they are too thick cut them in half)
1-2 c. teriyaki sauce
Slices of Swiss Cheese
1 can pineapple rings
Hamburger buns
Mayo
Lettuce (optional)
Tomatoes (optional)
Onions (optional)
Step 1: Place chicken Breasts between two sheets of wax paper and pound to an even thickness. Marinate for 4-6 hours ( I marinated mine over night which I think results in a better flavor) in a covered bowl or Ziploc baggie.
Step 2: Place pineapple rings on the grill and cook 3-4 minutes on each side. Remove and set aside.
Step 3 : Grill Chicken breasts 5 minutes on the first side, Turn over and add the pineapple rings an Swiss cheese slices and cook for an additional 3-4 minutes or until the chicken is fully cooked. Remove from grill and place on a bun. Spread Mayo under the top half of the bun and add any additional toppings as desired.

Asian Turkey Burgers

This past week I have been busy enjoying the great outdoors and taking advantage of the wonderful spring weather with my little family, hence the lack of any recent blog posts. With this wonderful weather I have been enjoying, comes outdoor cooking. I have been doing a lot of out door cooking lately!! One of my favorite Summer Grilling recipes is Asian Turkey Burgers. I love to make these burgers when we entertain during the summer and I have received wonderful compliments when I make them. I wish I could but I can not claim this recipe as my own. I got this recipe when I was working for a meal preparation company in St. George. These juicy burgers are sure to please even the pickiest of eaters and the wasabi sauce compliments the burgers with just a hint of heat! I hope you enjoy this recipe and as always I heart comments so please leave me your feedback!

Asian Turkey Burgers
1 1/4 lbs of Ground Turkey
1/3 c. sliced Green onions
1/4 c. Plain Yogurt
1/4 c. Breadcrumbs
1 T. Reduced Sodium Soy Sauce
1 T. Hoisin Sauce
1-2 t. Minced Ginger
1/4 t. Black Pepper
1/8 t. Cayenne (optional but we love a little heat!)

Mix ingredients until well blended. Shape meat mixture into patties and grill.

Wasabi Sauce
1/4 c. Light Mayo
1/4 c. Yogurt
1/4 t. lime juice

1/2 t. Soy Sauce

1/2 t. Dijon Mustard
1/2 t. Garlic Powder

1/4 t. Wasabi or Wasabi Powder

1/4 t. Paprika


Mix ingredients together until well blended. Refrigerate until ready to use! When ready to use, spread on buns and add any of your favorite burger toppings. ie: cheese, pickles, lettuce, tomatoes.
* I like to make the sauce a day ahead of time because it gives the flavors a chance to blend together.
