Chinese Beef with Mushrooms

If you enjoy beef and mushrooms you are in for a real treat with this oriental inspired dish. You don't need to feel intimidated in making this dish because it is very easy to prepare. Soy sauce combined with Oyster sauce and other spices make for a delicious gravy. By adding beef and mushrooms and any vegetables like onions, peppers or even broccoli to the gravy, you have a complete meal. This oriental dish will not disappoint. My husband and two kids really enjoyed this dish. In fact, they enjoy anything that has oriental inspired flavors; especially when it is served over white or brown rice. I guarantee you won't have any leftovers!

Chinese Beef with Mushrooms
Ingredients:
11/2 lb flank steak, sliced into thin strips
4 garlic cloves, finely chopped
4 T. oyster sauce
4 T. soy sauce
2 t. sugar
1 t. salt
1/2 t. Ground Black pepper
4 t. cornstarch
1 c. water
2 T. Oil
1 c. Fresh mushrooms, sliced

Directions:
Step 1: In a large bowl combine garlic, oyster sauce, soy sauce, sugar, salt, pepper, water and cornstarch. Mix well. Add flank steak and marinate for 30 minutes.
Step 2: Heat a wok or fry pan to medium high heat. Add oil. Remove Steak slices from the marinade with a slotted spoon (reserving the marinade) and place into the pan and stir fry until the steak is fully cooked (about 5 minutes). Remove from the pan and set aside.
Step 3: Add a little more oil to the wok if necessary and add mushroom slices. Stir fry mushrooms for 3 minutes or until tender. Add the marinade liquid to the wok, bring to a boil. Reduce heat and simmer for 30 seconds. Return steak to the pan and simmer until heated through.

Orange Chicken with Vegetable Stir Fry

I don't know about any of you but since the holiday season has begun, I have indulged a little too much in Halloween candy. I made this recipe last night for my family to help off set the holiday sweets that I have eaten and hopefully keep the chub on my thighs at bay. This recipe is a wonderful one to add to your cookbook especially when you have indulged like I have and want to put something good into your body instead of junk. I love that this recipe uses several vegetables: carrots, red onions, celery, green peppers, and red peppers. The vegetables combined with chicken is a wonderful combination when mixed with the savory orange sauce served over brown rice. I have to admit too, that their is no fighting at my dinner table when I serve this dish because my kids can't get enough of this Orange chicken. What is even better is that it made so much that my little family of four will be eating it again tonight as left overs!! Hurray for leftovers!

Orange Chicken with Vegetable Stir Fry
Ingredients:
4 chicken breasts
3/4 c. flour
1/4 tsp. Salt
2 TBS Olive Oil
5 large carrots
1 onion, I used a red onion and loved it
2 bell peppers, your choice between green, yellow or red.
6 stalks of celery
Salt and Pepper

Sauce:
3/4 c. Fresh Orange Juice
1/2 c. Brown Sugar
1/4 c. Soy Sauce
1/2 tsp. ginger
2 t. rice vinegar
1/2 tsp. sesame oil
A couple pinch of red pepper flakes
2 TBS. Cornstarch
1 c. chicken broth

Directions:
Cut chicken breasts into 2 inch cubes. Combine the flour and 1/4 tsp salt into a bowl. Add chicken and combine until all the chicken is covered in the flour mixture. Heat up a large skillet. When skillet is nice and hot add 2 T. oil and then add chicken. Stir fry until chicken is cooked through and lightly brown. When your chicken is cooked through and lightly brown. Remove from skillet onto plate. Now add another 1T. of oil to skillet, add your veggies and cook until tender crisp about 10 minutes. While veggies are cooking, add all ingredients for the sauce in a sauce pan. Whisk ingredients together until they are well combined. Bring to a boil. Once it is boiling it will thicken up for you, it may take between 5-10 minutes for it to do this. Stir every so often so it won't burn. Once sauce is nice and thick pour it over your veggies and chicken. Combine until sauce coats both chicken and vegetables. Serve with white or brown rice!

Asian Turkey Burgers

This past week I have been busy enjoying the great outdoors and taking advantage of the wonderful spring weather with my little family, hence the lack of any recent blog posts. With this wonderful weather I have been enjoying, comes outdoor cooking. I have been doing a lot of out door cooking lately!! One of my favorite Summer Grilling recipes is Asian Turkey Burgers. I love to make these burgers when we entertain during the summer and I have received wonderful compliments when I make them. I wish I could but I can not claim this recipe as my own. I got this recipe when I was working for a meal preparation company in St. George. These juicy burgers are sure to please even the pickiest of eaters and the wasabi sauce compliments the burgers with just a hint of heat! Asian Turkey Burgers
1 1/4 lbs of Ground Turkey
1/3 c. sliced Green onions
1/4 c. Plain Yogurt
1/4 c. Breadcrumbs
1 T. Reduced Sodium Soy Sauce
1 T. Hoisin Sauce
1-2 t. Minced Ginger
1/4 t. Black Pepper
1/8 t. Cayenne (optional but we love a little heat!)

Mix ingredients until well blended. Shape meat mixture into patties and grill.

Wasabi Sauce
1/4 c. Light Mayo
1/4 c. Yogurt
1/4 t. lime juice

1/2 t. Soy Sauce

1/2 t. Dijon Mustard
1/2 t. Garlic Powder

1/4 t. Wasabi or Wasabi Powder

1/4 t. Paprika


Mix ingredients together until well blended. Refrigerate until ready to use! When ready to use, spread on buns and add any of your favorite burger toppings. ie: cheese, pickles, lettuce, tomatoes.
* I like to make the sauce a day ahead of time because it gives the flavors a chance to blend together.
